Chunky Monkey Banana Nice Cream

So its no secret that we love dessert – in all forms! And we’re always trying to find healthier alternatives to the traditional desserts. A few years ago we came across the magic of freezing bananas and started making chocolate dipped banana bites, the texture of a frozen banana is very similar to ice cream. So it was a small leap to ACTUALLY make ice cream with just bananas; creamy and luscious you can add almost any flavoring or topping for a quick and healthy frozen dessert! 

Tips & Tricks

  • We like to keep things simple with chocolate chips but you can use a variety of toppings – if you’re using a nut butter or powder, add it at the end and let the mixture process to allow full incorporation; for solid toppings e.g. nuts add them at the end to avoid them breaking down 
  • Refrigerate for a minimum of 1-2 hours before serving, this will keep in the freezer for 3-5 days

Ingredients

  • 2 ripe bananas cut into 1 inch slices frozen
  • 6 tbsp milk of choice 
  • 1/2 tsp vanilla extract
  • Toppings: dark chocolate and peanut butter chips

Directions

  1. Freeze bananas for at least 2 hours prior to blending
  2. Add to a food processor and pulse on low adding milk 1 tbsp at a time 
  3. It will take a few minutes for the bananas to breakdown, so go slow and add milk one tbsp at a time to avoid an overly liquid mix
  4. Once the bananas are smooth add vanilla extract and continue to process on low, you want to incorporate air into the mixture to get the fluffy ice cream like texture
  5. Transfer to a Tupperware and add in toppings of choice and store frozen till serving
